    @HugS86 @bonfireten I literally had a bread expert come to my class to explain to me that some of the treatment California water used was fucking up his leavening, and he had to buy an expensive filter at his restaurant or else the yeast would die easier.

      @HugS86 @bonfireten Breads are INSANELY finicky. You’re gonna get different types of proofing based on the weather(literally air pressure and humidity). I have no doubt something about NYCs water effects the taste, be it the lack of treatment or its softness or its mineral content
